These pancakes are sooooo fantastic! And they're healthy (probably more so if you use less yolks & more whites of the eggs.....).
Dump in a blender:
6 eggs
1 cup gf quick cooking oats
1 cup cottage cheese
1 tsp vanilla
1/2 tsp cinnamon
Blend.
Cook on a griddle & serve with Maple Syrup!
